Mrs. O’s Fresh Corn Salad Recipe
Ingredients:
Directions: Shuck fresh corn, rinse and pat dry. Cut corn kernels from the cob, cutting close to the cob. Toss the kernels in a large bowl with red onions, green pepper, red pepper, balsamic vinaigrette, salt, and pepper. Toss the vinaigrette as you would a salad, adding more if needed. Other nice additions are chopped tomato and chopped fresh avocado. Taste for seasonings This salad is great if sets overnight, is great a summer side dish and served with fish or chicken. Serves 6-8. To make this recipe even easier, try the OXO Good Grips Corn Stripper. It captures the corn and juices so they don’t splatter all over the counter or work area. It’s one of those items that should be featured in Cook’s Illustrated. Enjoy! -Mrs. O

Summer Camp TipsJust where did this week go? I feel like I’m rushing to get so much done before summer begins and I don’t even have kids that are finishing up school, so what’s my worry? I have seen the middle school graduations in progress on my way to work in the morning and it brought back some great memories of when my children were younger and how fun the last week of school always was. That lasted for about a week and we were all ready for summer camp!
I’m originally from New York, so Summer Camp has a much different meaning to the east coasters than it does to the west coasters. We couldn’t drive to a beach in an hour, so we went to camps that could offer the experience of a summer of fun, water and great activities. I’ll be honest –  I actually hated camp because I didn’t like being away from my mom for that long, but we did go to our family beach house for the entire summer. The mom’s and kids went for the whole summer, the dad’s for about 2 weeks of vacation and then commuted back for the weekends. We shopped for back to school clothes before returning home on Labor Day Weekend. Funny that my kids were the same way about leaving me, but I ‘made’ them go. After all, summer camp is healthy and I was determined for my children to do all the things that I didn’t. We laugh now, but those begging telephone calls were brutal. We did have lots of fun shopping, packing and preparing – it was just the ‘going’ part they didn’t like. Go figure. I think I really got it down and loved making it easy and fun for them. My favorite part was tucking my little notes for them to find in surprise places throughout their stay and sending them care packages. I loved making them feel special and loved. We had a special visitor today at Organize.com! As many of you know I LOVE DOGS-especially Sammy our Organize.com mascot
She is a puppy, so she mostly slept…but she did take a liking to office supplies-especially an orange highlighter!
This weekend I got together with some girlfriends and headed to The Pink Carpet Premiere of Sex and the City 2! The movie was GREAT-my new mission is Charlotte’s wardrobe!- and the best part was that all the fun was for a good cause, breast cancer awareness! SATC as you may already know is based in New York City, one of my favorite travel destinations!
